Today work was slow again. I was given a story to do on a new book on short stories by M Koshy which didn’t take long.
I also attempted to buy an Indian sim card. A process which I found to be impossible and the sales guide was not in the slightest bit helpful.
That night we went to cooking class where we learnt how to make.
Lemon Rice
- Put pan on gas with sunflower oil. Add mustard seeds.
- Add ½ teaspoon of black gram dal and same of Bengal gram dal.
- Add 1 tsp of ground nuts.
- Add one hand of cashew nuts.
- Mix with spoon
- Add curry leaves
- Add green chillies
- Add ½ tsp of tumanic powder
- Add cold rice.
- Add 1 tsp of lemon juice
Channa masala
- Fry ½ cup of desiccated coconut in oil.
- Mince 1 onion
- Crush garlic and ginger in blender
- Add garlic and ginger paste.
- Cut up 2 tomatoes
- Let the coconut go golden borwn.
- Add the tomatoes to the onion mix.
- Boil potatoes
- Add ½ tsp paprika and some coriander to the mix.
- Add chickpeas
- Add salt according to taste.
- Bring to poil then add coconut paste.
- Let simmer for 15 minutes.
- Add ½ tsp of green masala powder and pepper powder.
North Indian dosa.
- ¼ kg of wheat powder.
- Add a little salt.
- Add 3-4 tsp of oil.
- Add a pinch of sugar.
- Mix it all up
- Add water and make a dough.
- Add onions
- Add tsp of chopped coriander leaves.
- Add 1 inch of grated ginger.
- Add above to potatoes.
- Add salt to taste
- Add a pinch of green masala powder.
- Add ½ tsp of chilli powder
- Add 1 tsp lemon juice.
- Mix together with fingers
- Roll out dough
- Put oil and flour on the dough.
- Add the filling
- Wrap the dough around the filling and roll again.
- Fry in pan.
